Question

If something is past its use-by date, you can no longer sell it. Broken products, whether or not caused by a customer, wilted flowers that you can no longer sell.

How do you record such items?

You don't have to record them. It can always happen that you lose something or something breaks. You don't have to record that either. That's only going to happen in exceptional cases, so it won't have a major impact on your turnover.
