When entering a sales invoice, I can’t select the vAT rate; it remains at zero. I can’t edit it to 6. Why is that?

No idea, but that seems like something you should ask support. Community is for entrepreneurs who ask questions to other entrepreneurs ;)
You really should try it out for yourself. Even if you don’t have a company number yet, you can already go ahead.
