I officially started as a self-employed therapist in a secondary occupation at the beginning of January, but I haven’t started working yet. Should I indicate ‘store closed’ as the status for daily receipts from the start, at the beginning of January, since I hadn’t scheduled any appointments yet? And then enter daily receipts from the moment I actually start appointments?

That doesn't matter for those first few days or weeks. But personally, I would start filling in 'no daily receipts' as soon as you were available for customers. However, it doesn't matter for your accounting or profit calculation. Nor does it matter for taxes: for them, the only thing that counts is that you started in this quarter.
