vAT when buying from a private person and selling to a private person

Question

If, as a business model, I buy something from a private person, do something with it to increase its value and then sell it back to a private person, what about taxes?

More specifically, on what part of my selling price do I have to charge vAT, given that vAT has already been paid on the purchase price?

Suppose I buy something for €2,000 from a private person and sell it back for €3,000. Do I have to charge taxes on the total amount of €3,000 or on the amount that has not yet been subject to taxes, namely €1,000?

If I am not mistaken, vAT should only be charged on the added value, as vAT has already been paid on the first part in the past. So on that €1,000.
