I saw that there is a template available for a payment reminder. Is this reminder sent to the customer automatically, or does it have to be done manually? If so, after what period of time are these emails sent by Dexxter?

These are not sent automatically. In the invoice summary, you can send them yourself if necessary by clicking on the email icon.
