I delivered work in December 2023 and invoiced it with a sales invoice at the beginning of January 2024. Can I change the fiscal date for the sales invoice to December 2023 somewhere? Or is it correct that I record this income under the 2024 financial year?

Your 2023 financial year should already be closed. Normally, you can no longer issue invoices for that year. You can still edit this, but that seems too complicated to me. I would just book it for 2024.
You really should try it out for yourself. Even if you don’t have a company number yet, you can already go ahead.
