Hey, I am considering starting my own bookkeeping because I am not really satisfied from my accountant and want to save costs this way (because they keep saving). But now my question is whether Dexter is the ideal tool to do this if you work with double-entry bookkeeping. All feedback is welcome.

No, double-entry bookkeeping is not possible in Dexxter. At least, not that I don't know.
Do you have a sole proprietor? Why would you need double-entry bookkeeping? Or do you have a partnership?Double-entry bookkeeping is indeed not possible with Dexxter. I myself switched from an overly expensive accountant and double-entry bookkeeping to go to Dexxter in combination with an accountant who helps me keep everything okay quarterly (initially about 4 hours, now easily done in 1 hour). Double-entry bookkeeping is not required for sole proprietors. At first, my new accountant was a little sceptical about single-entry bookkeeping because it makes it more difficult to spot errors in your accounts. I now hear from him that they are now assisting several new self-employed people and part-time workers in this way. I find Dexxter a very good tool for single-entry bookkeeping. Some aspects could still be improved, such as the options to update the template from your outgoing invoices, which are rather limited. Incoming invoices cannot be broken down according to vAT rate either. I have tested several packages myself and Dexxter best closes to what I expect from an accounting programme. Clear and, above all, simple, without too many settings, etc.
You really should try it out for yourself. Even if you don’t have a company number yet, you can already go ahead.
