I would like to hire some acquaintances to help me. My statute does not fall under flexijob and the only option would be to hire them as independent helpers.
Does anyone have experience with this? How should I process these costs in Dexxter?

The federal government plans to greatly expand the list of flexijobs or even abolish it altogether (so that flexijobs can be used everywhere). The legal texts are currently being prepared. Wait until they have been approved by the Chamber of Representatives and then check whether you can also make use of them. In the meantime, you will either have to work with self-employed helpers or they will have to invoice you (as self-employed persons in a secondary occupation).
You really should try it out for yourself. Even if you don’t have a company number yet, you can already go ahead.
