I just submitted my customer list via Dexxter for the first time, with success.
In previous years, I had my accountant do this for me, but I no longer work with them.
However, I now notice that my previous customer lists do not appear on Intervat. Is this normal, or have they not been submitted for years?

Here are the main reasons why they may be missing:
Submission via the accountant's mandate: When an accountant submits declarations, this is usually done via their own professional certificate and mandate. These documents are archived under the submitter's profile. Although the data is linked to your vAT number, the pDF receipts do not always appear automatically in your own Intervat summary.
History in MyMinfin: The best place to check whether the listings have actually been submitted is not Intervat itself, but MyMinfin.
Log in as an entrepreneur (on behalf of a company).
Go to the "My documents" tab.
Filter on "vAT" or search for the pDFs from the previous years. If the bookkeeper submitted them correctly, the official confirmations should be here.

You really should try it out for yourself. Even if you don’t have a company number yet, you can already go ahead.
